Comfort Food, by Kira


Today I am posting for my husband. We lost one of our dear furry friends today. Mister Ike. He has been with use since we bought our house. Ike was never much of a mouser but he was very affectionate. Most mornings greeting you as you stepped out of the shower, that was his time for some love. 


I am going to share a recipe with you. Its for one of our favorite comfort foods. Apple crisp. 


In a bowl, mix 1 tsp true cinnamon, 1 tbsp spelt flour, 2 tbsp sugar and about 6 cored and sliced apples, skin can be left on or taken off. I like to use a more crisp firm apple. One that keeps its shape when baked but you can use what ever kind you like. I like to use matsu or gala.


In another bowl, start with about a 1/4 cup sugar and about 4 tbsp of molasses. Mix them together, then add 1 cup of quick oats and 3/4 cup of spelt flour, tsp cinnamon. Mix. Melt about 1/2 cup of butter and mix into oat mixture.


Preheat oven to 350 deg F.
Pour apples into pie plate and pour oat mixture over top. Bake for about 35 to 45 min or until top is golden brown. 


                            Enjoy with a cup of cocoa and a dollop of vanilla yogurt on the side.
