Tea Please! Bee-Balm Tea, by Kira


Warm weather, hard work, and growing plants calls for a cold glass of homemade iced tea. 
I have had a few requests for this recipe. 
Bee-Balm Tea. 

Violets

Yes!  Ice cubes with violets inside.
The kids love them.


Bee-Balm


Peppermint


Chamomile





Bee-Balm Iced Tea


2 cups (not packed) Fresh bee balm
A few sprigs of peppermint (3 tbsp)
A couple sprigs of chamomile (2tbsp)
1/4 cup lemon juice
1/4 cup sugar or honey
1.5 litres of boiling water


Bring water to a boil. 
Add this to a glass bowl along with the herbs. Cover. 
Let sit for 5 to 10 minutes.
Strain and add the sugar or honey and the lemon juice. 
Stir and refrigerate. 


This tea is great served as a hot tea too!




And the violet ice cubes: 
Fill the ice cube tray half full then put in your violets. 
Deep freeze for about an hour or so. 
Take out and fill the trays completely, then freeze.

  1. violet ice cubes?! Soo sweet. Sounds like a delicious, fresh tasting tea treat... save a cup for me ;o)
    Are all those herbs growing there now? I always love cramming a pile of mint leaves into hot water with honey.. mmmMMmmm!

      Yes, chamomile, bee-balm, and mint are all growing here now. All three are very easy to grow.
      Bee-balm is beautiful, smells so pretty and is great in a tea. The variety in my garden is called Jacob Cline(Monarda Didyma), they produce big scarlet blooms. The bees and humming birds love them too!
