Chocolate Quinoa Cake, by Kira
This cake is a staple here.
I use this for the kid's birthday cakes, special occasions, or just a sweet treat to make with the kids.
This cake is made with cooked quinoa - no flour!
Ingredients:
2/3 cup golden or white quinoa
1 1/3 cup of water
1/3 cup of milk
4 large eggs
1 tsp vanilla
3/4 cup of butter, melted and cooled
1 1/2 cups cane sugar
1 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Bring the quinoa and water to a boil. Cover, reduce to a simmer and cook for 10 minutes.
Turn off the heat and leave the covered sauce pan on the burner for another 10 minutes.
Fluff with a fork to allow the quinoa to cool.
Preheat the oven to 350F.
Lightly grease two 8 inch round or square cake pans. ( This also fits nicely into one 9 x 13 baking pan.)
Combine the milk, eggs, vanilla in a blender.
Add 2 cups of cooked quinoa and the butter and continue to blend until smooth.
Whisk together the sugar, cocoa, baking soda, baking powder and salt in a medium size bowl.
Add the contents of the blender to the bowl and mix well.
Divide the batter evenly between the two pans and bake on middle oven rack for 40 to 45 minutes.
Remove the cake from the oven and cool completely in the pan before serving.
Our favorite way to top this cake is with freshly whipped cream and berries.
