It is that time of year.
Pesto. So tasty so versatile.
I like to keep my pesto simple. I use lemon juice, walnuts, garlic scapes, olive oil, sea salt and parmesan.
I had a lot more ingredients than my little food proceser could handle (time to upgrade).
So I procesed the walnuts first, put them into a bowl and did two batches of scapes, cheese, salt and olive oil.
Combined them all in a bowl and put them into jars.
I never measure when making pesto. Just go by taste.
Pesto is great with chicken, added to pasta, on crackers, mixed into dips for veggies or as a base for pizza.
