Honey Spelt Shortbread Cookies, by Kira

 
 
 
 
 
These cookies are simple and delicious.

Ingredients

1 cup of butter
1/3 cup of honey
1 tsp of vanilla extract
1 1/2 cups of spelt flour
1 cup of arrow root flour.

Preheat oven to 300F

Using electric mixer, mix the butter, honey, and vanilla until light and fluffy.
Add in the flours until combined.
Press dough into dry cast iron pans. Score the surface of the dough into wedges.
Bake for 35 minutes or until lightly browned.
Let cool completely and cut into wedges.

  1. Note: if you are using spelt light flour there is no need to use arrowroot powder. I made these again and used only spelt light flour and they turned out perfect!
