Wood & Pork, by Kira
































It has been extra busy around here!
Cutting, grinding, curing, rendering and packaging pork.
We are nearing the end of the pigs we butchered last week.
Andrew and I are working on the last of the lard, which we will render over the next couple of days.
And there is the ground meat that will be finished tonight.
The bacon is finished curing and has been packaged.
It is so good!
We cure it ourselves; Brown sugar and salt, 2:1. No nitrates or other chemicals.
There will be a lot of lard for baking, cooking, and soap.
We are trying to wrap this pig up so that we can slaughter our last two pigs next week.
My dear husband has also been working on firewood. Skidding it out of the bush, bucking, and splitting.
Of course there are other projects going and the usual chores too.

In another couple of weeks we will be able to relax and catch our breath.
Just this last busy stretch before winter.
It is truly worth it.
The pork is amazing and there is nothing like cuddling on the couch in front of a fire!
